THE GRAPE VARIETIES

Our low yield allow the grape varieties to be totally expressive : Carignan (25%),
Syrah (25%), black Grenache (25%),  Mourvedre (25%) reveal this Côtes du Roussillon.

THE VINIFICATION
           
Carignan : carbonic maceration
Syrah, Black Grenache,  Mourvèdre : traditional vinification

THE TASTING

Colour : intense bright red colour

Nose : very generous nose of fresh fruits

Mouth : meaty and rich, gouleyant wine. Continuity between nose and mouth.
   Souple and velvety tanins.

THE CONSUMING

To be drunk with grilled meat, mixed salads, delicatessen. In summer, Cuvée Augusta can be drunk chilled.

(GUIDE HACHETE 2005)

 

 

 

THE GRAPE VARIETIES

Syrah 50 %, Mourvèdre 30% and Carignan 20% . Yield : 28hl/ha

VINIFICATION

Syrah and Grenache Noir are vinified traditionnally, carignan has been vinified by carbonic macération.

TASTING

Colour : nice intense garnet
Nose :  intense and complex with hints of soft spices. Aromas of scrublands and undergrowth, jam of dark berries, burnt caramel
Mouth : meaty and dense. Hints of liquoriced aromas, souple and harmonious tannins  A terroir  harmonious wine .

CONSUMING

To be served at room temperature (19°- 20°)in a decanter. Nice with  red meat (eg : wild game)and spicy sauce.

Cuvée FERNAND CADENE 2001

Appellation d’Origine Contrôlée

(Côte du Roussilon Red)

 

THE GRAPE VARIETIES

This high - quality wine is made of 60% Syrah, 20% Grenache Noir et 20% Carignan.

VINIFICATION

Syrah and Grenache Noir : selectionned grapes, traditionnal vinification
Carignan : carbonic maceration .
This cuvee has been aged in french oak barrels Seguin Moreau (total ageing : 12 months)
            Yield : 30hl/ha

TASTING

Colour : dark purplish
Nose : powerful , complex, with spicy and vanilla notes
Mouth : very complex mouth with liquorice’s aromas, powerful tanins. Very long wine

CONSUMING

To be served at room temperature (18-19°) in a decanter. Very nice with game and spicy meal.

Cuvée FERNAND CADENE 2005

THE GRAPE VARIETIES

This high - quality wine is made of 40% Syrah, 40% Grenache Noir et 20%  Carignan.

VINIFICATION

Syrah and Grenache Noir : selectionned grapes, traditionnal vinification
Carignan : carbonic maceration .
This cuvee has been aged in french oak barrels Seguin Moreau (total ageing : 15 months)
            Yield : 28hl/ha

TASTING

Colour : dark ruby colour
Nose : franc nose of red berries, with hint of vanilla.
Mouth :, A fleshy , round and well-knit wine with complex hints of red berries, liquorice, cocoa. A a long and nice finish.

Vin de Pays des Côtes Catalanes red

 

 

 

 

THE GRAPE VARIETIES

Syrah 50 %, Mourvèdre 50%

VINIFICATION

Fermentation on selected yeasts. Control of temperatures
Handling under carbonic dioxide gas.

TASTING

Colour : nice purplish colour
Nose : wild strawberries
Mouth : nice freshness and roundness. Nice aromas of dark berries, tannins are round. A wine full of fruit!

CONSUMING

To be served at room temperature,(or chilled in summer) with  grilled red meat , delicatessen, or cheese.
